Fish Tacos with Spicy Sriracha Sour Cream

Everyone has their own recipe for fish tacos, which kind of fish, what kind of sides, but I've perfected mine and think that it is pretty easy to make and SO tasty.


What you need:
  • 4 Cod fillets (approx. 1/2 filet per taco)
  • 1 bag of Dole Classic Coleslaw 
  • Soybean oil
  • 1 cup of thinly sliced green onions 
  • 1 bunch of cilantro
  • 1tbs minced garlic
  • Curry/Salt/Pepper/Onion Salt/Garlic Powder
  • Olive Oil
  • Flour tortillas
  • Sour Cream
  • Sriracha sauce
  • 3 Avocados
  • 2 diced Roma tomatoes
The Fish:

I started out by marinating the cod fillets for two days with minced garlic, olive oil, curry, salt, pepper, onion salt, garlic powder and one teaspoon of soybean oil.  If your pressed for time you don't have to marinate for that long, a few hours if you want, I just had the time.

When you are ready to start cooking the fish, add a few tablespoons of oil into a nonstick pan, along with a knob of butter.  Once melted and just slightly bubbling, add in the fish and cook for 4-5 minutes on each side, or until golden brown.  Remove from the heat and place on a plate.  I took each fillet and cut it in half or thirds.

At this point you can warm up the tortillas in the microwave, about one minute with a damp paper towel on top and get the table set with plates and sides. (Recipes below).


Slaw:

I added approximately half of the bag of coleslaw into a bowl and added in a half a cup of chopped cilantro, two diced tomatoes, one teaspoon of soybean oil, salt/pepper to taste, the juice of one lime and the thinly sliced green onions into a bowl.  I mixed everything together and tossed it into the fridge until the rest of the dish was ready.


Spicy Sriracha Sour Cream:

Add one cup of sour cream to a bowl and mix in a few tablespoons of sriracha sauce (add more or less depending on how spicy you like it).  Mix well and refrigerate until ready to use.

Bam. Too easy.


Avocado Mash:

This is my "I'm too lazy to make official guacamole, so I just put this together-mock guac".

Mash three avocados in a bowl.  Mix in salt/pepper to taste and the juice of a half a lime.

Toss in the fridge until your ready to eat.

Done.


Bring all the food to the table and be ready to assemble some pretty tasty fish tacos!

  1. Oh my goodness..... this is mouthwatering.
    I would eat that in an instant, I particularly love fish. I would skip the tortilla though; like I said, I have to avoid carbs.

    1. Katerine! You could also try it instead of a tortilla, rather as a lettuce wrap? I think that would be super tasty as well.
